Points on absolutely everything, that's the aim?
This may be teaching some of you to suck eggs, but I didn't know this one until a few months ago. Why solely rely on paying your energy bill with just a direct debit when you could be earning points too! In truth, this little hack also works with any other card, its just seemingly rare that an American Express is accepted. But why would you want to do this? I'll first explain how this works, and then why.

Now, this does depend on your tariff. For context, I have a direct debit set up, but for a low amount per month, and then I top up my Octopus account balance by using my American Express.

How to Pay Octopus Energy With an American Express
First off, login to your Octopus Energy account.
Once on your account page, look for "Make a one-off payment"

After that it's as simple as entering the amount you wish to deposit into your account.

The amount will be added to your credit card bill as normal just like any other transaction.
Why Does This Benefit Me?
First, I can earn points on my energy bill, what's not to like there!
Second, any amount your spend at Octopus goes towards hitting that sign up bonus you're trying to hit. Looking like you're going to miss it by a few hundred? Why not deposit some extra money into your Octopus account, and then reduce your direct debit down for a few months. Presuming you like to stay warm in the winter, that was money you were going to spend anyway!
This is a small hack, but could help you secure that juicy sign up bonus!
